24 Carrot

I have been trying to incorporate more vegetables into my daily life and one of the veggies I am currently loving on is carrots.  I am crazy about their crispy, crunchy texture and find them an amazing vehicle for delivering hummus or other tasty dips.  At only 50 calories per one cup serving, they are a low calorie, filling addition to any day.

One medium sized carrot provides two grams of fiber- helpful in keeping you feeling full longer, feeding friendly gut bacteria and balancing blood sugar.  Their fiber is also important for lowering cholesterol.

One cup of carrots provides over 100% of the Vitamin A your body needs.  Vitamin A is important for vision health and the immune system.  Vitamin A can also help protect our skin from the sun’s harmful rays.

Carotenoids, a substance found in carrots, may help fight prostate, breast, colon, and stomach cancers.

Carrots are rich in the B vitamin biotin, which plays an important role in fat and protein metabolism.

Carrots get their rich orange color from their beta carotene, an antioxidant that can be a powerful tool in the fight against diabetes.

With all these amazing health giving properties, carrots are a 24 “carrot” gold addition to any diet.
