As many of you know, I am a Kale freak and recommend that everyone add in some sort of dark leafy green to their daily diet. Now Kale may be all the rage, but there is a new kid in town that I am absolutely gaga for and that is COLLARD GREENS.
COLLARD GREENS are loaded with:
- Fiber -7. 6 grams per cup. (this is more than Kale that rings in at 5 grams per cup which is still pretty darn good).
- Rich in Vitamin A and K, two antioxidants that helps boost your immunity.
- Rich in Magnesium, Calcium and Potassium (especially important for all you Refinery athletes)
- Low in Calories
Collards are also super versatile. You can add them into soups, stews and stir-fries. Steam, saute or even boil them. But my absolute favorite way to eat them is RAW. I use them as a healthy substitute for bread and tortillas and make the most delicious sandwich wraps with them.
I literally eat these almost every day for lunch and have even had them for breakfast before too!

These Collard Wraps take about 5 minutes to whip together and you can even make them ahead of time to grab and go. Yum!
