Crazy for Cauliflower

Cauliflower is enjoying its moment in the sun!  It seems like everywhere you look, you can find a new way to enjoy this tasty cruciferous vegetable-gnocchi, baked, riced, fried, grilled, made into steaks or pizza crust- the possibilities are endless.  Given all these options, you may be wondering why should cauliflower become a regular part of your life?

Cauliflower can be an important aid to bone health.  It provides over 70% of our daily needs for vitamin c, important in collagen production and is also loaded with vitamin K, which helps fight bone loss.

Cauliflower is a cruciferous vegetable that contains the phytonutrient Indole-3-carbinol, important to help the liver in its detox functions.

The phytonutrients in cauliflower are antioxidant superstars, helping to reduce the incident of cancer.

Each cup of cauliflower has 3 grams of fiber.  Fiber reduces constipation, helps maintains healthy bacteria in the gut and helps with weigh loss by keeping you  full longer.

Cauliflower is a good source of the nutrient choline, important in maintaining cell structure and the production of neurotransmitters that help maintain a healthy nervous system.

Cauliflower can serve as a low carb alternative to grains for those who are interested in a low carb diet- think of it as a replacement for rice or pizza crust or a grain salad.

With only 25 calories per cup, it is low in calories, making a great low-calorie substitute for high-calorie foods, such as rice and flour.
