Food Focus: Coconut Water

Good Morning and Happy Sunday!

I hope you are having a great weekend and enjoying this glorious cooler weather.

During our heat wave I was recommending that my athletes keep hydrated by replenishing their bodies with coconut water after workouts.

Coconut Water is the only drink known to man that is isotonic, which means that it has the same electrolyte concentration as our blood.

It is also loaded with 5 essential electrolytes: potassium, magnesium, calcium, sodium, and phosphorus.

Coconut water is composed of many naturally occurring bioactive enzymes such as acid phosphatase, catalase, dehydrogenase, diastase and more. These enzymes help with digestion and metabolism.

Hydration means healthy, glowing and fabulous skin & more energy!

Below is one of my favorite smoothies and I think you will like it too.  This makes about 64 oz of pure goodness. I recommend storing the extra smoothie in mason jars. They will last in the fridge for up to 3 days. I love to drink one first thing in the morning and then one in the afternoon around 3:00pm. This helps curb sugar cravings.

Abby’s Green Glow Smoothie?

Complete with vitamins and protein, this smoothie is guaranteed to give you superpowers for a brand new day.

Ingredients:

  • 2 cups coconut water
  • 1 large handful roughly chopped greens (kale, spinach, collards, or a mix)
  • ½ a bunch of romaine lettuce
  • 1 apple, cored
  • 1/2 frozen banana
  • 1 pear
  • 2 stalks celery
  • 1/2 cucumber
  • 1 tbsp coconut oil
  • Juice of 1 lemon

Place all the ingredients in a blender and blend until smooth.

Enjoy!
