Good Morning and Happy Memorial Day!

I hope you are enjoying your day off and spending quality time with your loved ones.

Today I wanted to share with you the wonderful health benefits of MANGOS and give you a simple recipe that you may want to make for your Memorial Day celebration.  Mangos are hitting the produce area now and you will want to enjoy them while you can.

Mangoes are loaded with vitamins A, C and E, as well as minerals including potassium, magnesium and  calcium.  They are also packed with fiber and antioxidant compounds.

Health Benefits of Mangos

1) Alkalizes the Body- The tartaric acid, malic acid as well as the small amount of citric acid found in mangoes help maintain a healthy alkaline level in the body.

2) Aids Digestion– Mangoes contain enzymes that increase the breakdown of carbohydrates and protein as well as are loaded with natural fiber.  Both of these help digestion and elimination.

3) Amazing for Skin- they are a  great source of antioxidants, particularly vitamin C and A,  which keep your skin healthy and glowing.  Helps clear up acne too.

4) Aphrodisiac- Mango has aphrodisiac qualities and is also called the ‘love fruit’.  Mangos are rich is Vitamin E, which helps to regulate sex hormones and boosts sex drive.

The best part is that mangos taste amazing.  They are sweet and somehow slightly sour at the same time.  My favorite simple salad combines two of my favorites- Mangos and Avocados.

Super Simple Mango Avocado Salad

2 mangoes, cubed
2 avocados, cut into small cubes
1/2 small red onion, minced
2 tablespoons avocado oil or extra-virgin olive oil
1 tablespoon freshly squeezed lime juice (about 1/2 of an average lime)
1 tablespoon ACV= apple cider vinegar
sea salt and black pepper to taste
3 tablespoons toasted pine nuts

In a large serving bowl, whisk together ACV, lime juice, sea salt and pepper to taste. Slowly whisk in oil. I love Avocado Oil in this dish but Extra Virgin Olive Oil works great too.Toss in mangoes, avocado and red onion to coat. Top with toasted pine nuts.  Serve immediately.
