I hope you survived your Thanksgiving and are easing into the holiday season.
One of the things I love about the winter season, is the seasonal fruit, Persimmons! If you are not familiar with this bright orange fruit that looks like an orange tomato, you are in for a treat.
The taste is hard to peg. You want to enjoy them ripe otherwise they have an astringent taste, but a ripe one tastes sort of like a mix between a rose and a mango. I know… we don’t eat roses but for some reason it has a rose-like quality to it. Just try one, the health benefits only, are worth giving it a try! I think you will like it.
The Persimmon is actually a berry and has many great health health benefits.

Here is one of my favorite simple Persimmon recipes.
Non-Dairy Persimmon Parfait
½ cup soaked raw cashews (soak at least 20 minutes – up to an hour)
½ cup unsweetened almond or coconut milk from a carton (not canned)
½ teaspoon vanilla
1/3 cup rolled gluten-free oats (no need to cook these!)
1 tablespoon hemp seeds
1 cup chopped persimmon
Combine cashews, milk and vanilla in a blender and blend until smooth. Layer ingredients in a small cup: Dollop of cream, spoonful of persimmons, top with oats and hemp seeds and enjoy!
