I hope you are all doing well on this lovely afternoon.
Today, I want to share one of my newest obsessions- LUCUMA. I am always on the hunt for healthy alternatives to refined sugar and this one is a KEEPER.
LUCUMA is a type of fruit native to Peru that has long been used as a sweetener and flavoring agent there. You can find Navitas Naturals Lucuma Powder here at Whole Foods and New Seasons and I would highly recommend giving it a try.

The best part is that it tastes wonderful and does not spike your blood sugar like traditional sugar. It has a maple-like taste and can be used as a sugar substitute in recipes.
Here is one of my favorites:
Raspberry Lucuma Chia Pudding
Makes 4 servings
1 cup frozen raspberries
1 cup almond milk (or non-dairy milk of choice)
2 pitted medjool dates
1 tbsp Navitas Naturals Lucuma Powder
1 tbsp vanilla extract
pinch of sea salt
1/3 cup of chia seeds
Blend your nut milk with the raspberries, dates, vanilla extract, lucuma and sea salt.
Transfer mixture to a glass bowl and add the 1/3 cup chia seeds. Stir well.
Let mixture set in the refrigerator for several hours or overnight so that the chia swells and thicken.
Top with extra raspberries and almonds if desired.
