I tend to be a person who gets fixated on one breakfast for a long period of time. As a kid, it was often unhealthy foods like sugary cereal or cinnamon, sugar toast. Fortunately, as I have gotten older, my taste buds have matured. With the warm weather returning, I have found myself turning back to protein smoothies in the morning. My favorite smoothie recipe takes advantage of the abundance of red, juicy strawberries that are filling the grocery store shelves. I love including low calorie, no fat strawberries in my morning fueling because they are loaded with body boosting benefits.
In this time of the corona virus, immune boosting properties are important. One serving of strawberries has approximately 150% of your daily requirement of vitamin-C. They are also rich in antioxidants which minimizes free radical damage to the body and help protect against blood clots. Vitamin C is also an important weapon in the fight against cancer.
Strawberry’s 2.9 grams of fiber per cup can also be helpful in keeping you regular.
Strawberries are rich sources of potassium and magnesium, both of which are effective in lowering high blood pressure. These minerals are vasodilators, meaning they decrease hypertension and the rigidity of arteries and blood vessels. These reductions help blood flow easier throughout the body.
The Environmental Working Group suggests buying organic strawberries as they are listed as having the heaviest concentration of pesticides on the Dirty Dozen list.
Strawberries are a versatile, easy addition to your diet. Below is a yummy way to enjoy them.
Strawberry Cashew Milk
1 cup of cashews
4 cups of filtered water
10-12 stem removed strawberries
pinch of sea salt
Put cashews and dates in 3 cups of water to soak overnight.
Pour cashews, dates, salt and water in high speed blender and pulse until uniform consistency.
Place nut milk bag over a bowl and then pour liquid into the bowl.
Knead bag until all liquid is squeezed out of the bag.
Set aside bowl.
Put 1 cup of water and strawberries in high speed blender and pulse to uniform consistency.
Now put nut milk bag back over the bowl and pour strawberry liquid into bag.
Knead bag again to extract all the liquid.
Stir strawberry liquid into cashew liquid until uniform in color.
Refrigerate and enjoy.
