Time to Go RAW

Good Afternoon and Happy Sunday Everyone!

I hope you have been enjoying your weekend so far.

Today, I want to talk about going RAW.  Now don’t freak out, I am not asking you eat a 100% Raw Diet but eating a higher raw diet will help you:

  • Boost your Energy
  • Increase Mental Clarity
  • Regulate Digestion
  • Sleep Better
    And is Better for the Earth too!

The best part is that we naturally crave more fresh and raw foods during the Summer.

These foods have a natural cooling effect on the body. The lightness and high water, fiber and vitamin content work together to act as our internal air conditioning during these warm months. At this time of year we also need less dense, high-energy food because we get so much energy from being outside in the fresh air and sunshine.

There is no better season than Summer to have fun creating your own fresh, tasty, creative raw food/salad combinations. By simply tossing together several of your favorite raw veggies, naked or with a light dressing, you have a perfect meal for a hot summer’s day.

  • Try your favorite leafy lettuce with various sliced, diced or grated veggies. The possible combinations are endless.
  • Fresh herbs are a wonderful option to mix in, as they are packed full of flavor. Basil, Mint ,Cilantro and Dill are few of my fav’s.
  • Experiment with adding diverse forms of protein to your salads, such as nuts, seeds, beans, tofu, fish or poultry.
  • Pick up a light and healthy dressing at your local health food store, or mix up something easy, like lemon juice, black pepper, sea salt and olive oil or check out my favorite dressing below.

This is a great opportunity to try a new vegetable from your market. What are some creative flavors you’ve never tried before?
Fennel and mint?   Amazing!
Daikon radish and arugula? Delish!
Summer squash with watercress?  Perfecto!

Whatever you choose, have fun with your food and stay cool.

Here is one of my  favorite simple raw salads. This is perfect for the upcoming 4th of July Weekend.

Raw Apple Cabbage Slaw

Ingredients
1 medium Granny Smith Apple, peeled, cored and sliced  thinly with a vegetable peeler/shredder
1/2  a Red Bell Pepper, seeded and cut into thin strips
1/2  an Orange Bell Pepper, seeded and cut into thin strips
1 carrot, peeled and sliced super thinly with a vegetable peeler/shredder
2 cups red cabbage, sliced thinly

Dressing
4 tablespoons lemon juice
1 tablespoons honey
1 tablespoon grapeseed oil
2 tablespoons minced cilantro
1 tablespoon minced mint
sea salt and black pepper to taste

1/4 cup raw walnuts, chopped

Instructions:
In a medium bowl, add the apple, bell pepper, carrot, cabbage  lemon juice, honey, grapeseed oil. cilantro and mint.  Combine well .  Add sea salt and pepper to taste.  Top with chopped walnuts and enjoy!
